Coconut Chocolate Chip Keto Cookies
Okay, let’s face it.  I am a cookie monster.  I love cookies and always have, so now I come up with Keto-friendly cookie recipes, like this coconut chocolate chip one!  These little guys are so yummy & chewy, and they have a little fiber boost!
  1. Preheat oven to 325 degrees.
  2. Mix the eggs, butter, & vanilla together in an electric mixer, until mostly combined & broken looking.
  3. Add in the almond flour, ground flax seed, Swerve, baking powder, & salt on top, and mix together slightly with a spoon before fully mixing with the electric mixer.
  4. Once dough is fully combined, add the chocolate chips & coconut flakes & mix together.
  5. Scoop balls of dough with a spoon onto baking sheets.
  6. Bake for 14-15 minutes.
  7. Remove from oven & let cool before eating, then enjoy!
