Deviled Egg Chicken Salad

This is easy, delicious, and healthy! The perfect lunch!

I like to switch things up for lunch some days rather than leftovers or the same old stuff, so I came up with this quick & easy, yummy lunch!

First, I cut up thin pieces of celery until I had about a half cup, then I drained a can of chicken and plopped it in a small bowl, for mixing.  You could use cut-up cooked leftover chicken, if you have it!

 

Next, I added my mayonnaise and celery to my chicken, and cut up 6 deviled eggs into little chunks.  I use Primal Avocado Oil Mayo, but feel free to use a sugar-free mayonnaise of your choice.

 

 

After I added my chopped up deviled eggs to the bowl with the rest of the ingredients, I sprinkled with some salt & pepper & mixed it all together.  Once mixed, then it was ready for a light sprinkle of cayenne pepper and to eat!  I enjoyed mine over a bed of spinach, but it would also be great on lettuce, or in a sandwich on your favorite keto-friendly bread!  This made enough for two meals, so I saved my remaining half for my lunch the next day.

Instructions
  1. Chop/cut up a half cup of celery.
  2. Drain canned chicken and put in a small bowl.
  3. Add celery & mayonnaise to the chicken.
  4. Cut up the deviled eggs and add to bowl of other ingredients.
  5. Sprinkle with salt & pepper.
  6. Mix ingredients together.
  7. Sprinkle with cayenne pepper.
  8. Eat plain, on a bed of spinach or lettuce, or in a salad!

I don’t know about the canned chicken does it exist for real?

Hi Jen, you could try ordering Canned Chicken online. Otherwise, you can just cook some chicken breast, then cut or shred it a bit to use in this recipe. Hope you like it!

I made a vegetarian version of this for my husband using Quorn “chicken” pieces. I also used 1/8 tsp smoked paprika in place of cayenne. He loved it!! I will be making this for him again.
