Low Carb Chicken Parm
Now that it’s starting to get a little cooler out, I’m thinking of yummy fall recipes that I love, including this Low-Carb Chicken Parm!  It just as good, if not better, than the real stuff.

Instructions
  1. Mix ground flax seed, coconut flour, Parmesan cheese, salt, garlic powder, onion powder, & Italian seasoning in a small bowl. Set aside.
  2. Whisk egg & water with a fork in a small bowl. Set aside.
  3. Preheat oven to 400 degrees Fahrenheit.
  4. Grease baking pan or dish.
  5. Cut chicken breasts down the middle, reducing the thickness, then again down the middle, reducing the width, so that you have 4 pieces of chicken per breast.
  6. Dip each piece of chicken in the egg wash, then in the dry ingredients, until fully coated, then place on greased baking dish, until all pieces are evenly spaced on pan. (Note: If you have extra dry ingredients, you can sprinkle them over the top of the chicken)
  7. Bake at 400 degrees Fahrenheit for 15 minutes, or until center of the chicken reaches at least 130 degrees Fahrenheit.
  8. Remove from oven & top each piece of chicken with sauce & shredded cheese.
  9. Bake for another 5 minutes, or until cheese is fully melted.
  10. Serve over a bed of zucchini noodles, konjac spaghetti, or veggies or your choice!
