Cauliflower “Macaroni” & Cheese
I kept hearing about how yummy cauliflower mac & cheese is, so I thought I’d give it a whirl by making it similarly to how I would make regular homemade mac & cheese, with real noodles.

  1. Cut cauliflower up in small pieces and place in microwave safe bowl.
  2. Heat for about 8-10 minutes in 2-3 minute increments, stirring in between, until fully cooked
  3. Preheat oven to 375 degrees.
  4. Grease 9 x 13 glass pan with butter.
  5. Warm heavy whipping cream in microwave for 1.5 minutes.
  6. Melt butter in medium saucepan.
  7. Stir in almond flour & stir until a little bubbly, but not brown (about 2 minutes).
  8. Add in warmed heavy whipping cream, and stir until the sauce thickens and comes to a boil.
  9. Add in cheddar cheese, salt, & peppers.
  10. Cook for 2 more minutes, stirring regularly, then remove from heat.
  11. Pour cooked cauliflower in buttered pan.
  12. Pour cheese sauce over cauliflower & mix lightly, so that the cauliflower is coated evenly.
  13. Sprinkle on remaining cheddar cheese & poke in throughout cauliflower.
  14. Bake until cheese is bubbly and lightly browned (about 30 minutes).
  15. Serve sprinkled with a bit of ground black pepper.
