Coconut Chocolate Chip Keto Cookies
Okay, let’s face it. I am a cookie monster. I love cookies and always have, so now I come up with Keto-friendly cookie recipes, like this coconut chocolate chip one! These little guys are so yummy & chewy, and they have a little fiber boost!
I start off by preheating the oven to 325 and mixing the wet ingredients in my KitchenAid Mixer (eggs, butter, & vanilla) until it’s combined and has a broken look.
I then carefully add the almond flour, ground flax seed, Swerve, baking powder, & salt on top of my wet ingredients, and stir a little bit on top with a spoon before mixing again with the KitchenAid.
Once it’s fully mixed into a dough, I add in the coconut flakes & chocolate chips, & mix.
Next, I scoop out teaspoon sized balls of dough onto baking pans (I prefer baking stones for cookies).
I bake the cookies for about 15 minutes, remove from heat & let sit on the pans for about 5 minutes, then transfer to a drying rack. Once cool they’re ready to enjoy the yumminess!!!

- 2 eggs
- 1 stick butter softened / room temperature
- 1 tsp vanilla extract
- 1 3/4 cups almond flour
- 1/4 cup ground flax seed
- 3/4 cup Swerve sweetener Powdered / Confectioners
- 1/2 tsp baking powder
- 1/4 tsp Himalayan pink sea salt
- 1/2 cup Lily's sugar-free chocolate chips
- 1/2 cup unsweetened coconut flakes

- Preheat oven to 325 degrees.
- Mix the eggs, butter, & vanilla together in an electric mixer, until mostly combined & broken looking.
- Add in the almond flour, ground flax seed, Swerve, baking powder, & salt on top, and mix together slightly with a spoon before fully mixing with the electric mixer.
- Once dough is fully combined, add the chocolate chips & coconut flakes & mix together.
- Scoop balls of dough with a spoon onto baking sheets.
- Bake for 14-15 minutes.
- Remove from oven & let cool before eating, then enjoy!
