Savory Breakfast Chaffles

I’m a huge fan of savory & filling breakfasts and this checks both boxes and it’s super simple to make!

I start off by heating up my waffle iron and mixing 1 egg with a half cup of shredded Mexican blend cheese and a half teaspoon of Italian seasoning with a fork in a small bowl.  Then all  have to do is spray the waffle maker with a little oil, plop the mixture in the middle, close the lid, flip it, and wait till the light goes out to indicate it’s done.

While that one is cooking, I mix another egg, half cup of cheese, and Italian seasoning in the same bowl, so that it’s all ready to go for my next one.

Once the first on is done, I open the waffle maker, and pull it off with a fork onto my plate, then immediately plop the mixture of the next one in my waffle maker to get that one cooking.

I spread a little butter over each chaffle (cheese waffle) when they’re each done, so that it can melt when they’re nice & hot.  Once both of them are done, I top them each off with diced avocados, sprinkle with some Everything but the Bagel Seasoning, and a side of bacon!  Yum!

Instructions
  1. Heat waffle iron.
  2. With fork, mix 1 egg, 1/2 cup cheese, & 1/2 tsp Italian seasoning in small bowl.
  3. Spray heated waffle iron with oil, place mixture in center of waffle iron, close & cook until indicator tells you it's done, then remove with a fork & spread with butter.
  4. While first chaffle is cooking, mix remaining 1 egg, 1/2 cup cheese, & 1/2 tsp Italian seasoning in small bowl.
  5. When first chaffle is done, place mixture of second one in center of waffle iron, close & cook until indicator tells you it's done, then remove with a fork & spread with butter.
  6. Top both buttered chaffles with diced avocado, sprinkle with Everything but the Bagel Seasoning, and a side of bacon. Enjoy!
Recipe Notes

Nutrition facts include 2 chaffles topped with butter & avocado. It does not include bacon.

I’m excited to find this great recipe! I feel like I eat the same thing every morning for breakfast, so it’ll be nice to change things up occasionally.
