These bars are a HUGE favorite in my house, since they’re chocolate peanut butter (everyone’s favorite!) and vegan & keto-friendly! They’re also pretty simple & quick to make, so it makes a great dessert to have handy in the freezer for get-togethers or just for when you’re in the mood for something a little sweet!
I start off by chopping up my unsweetened coconut with my Ninja Chopper, so that it’s in fine pieces, since my son & husband don’t like the consistency of coconut, then in a large bowl, I mix the finely chopped shredded coconut with the almond flour, flax meal, and Swerve.
In a medium pot on the stove, set to low, I heat up & melt the one cup of peanut butter and coconut oil, until it’s a smooth consistency, then pour it on the bowl with the mixed dry ingredients, and stir that all together until fully mixed.
Then I plop that into the bottom of an 8″ x 8″ glass square baking dish, and spread it out, until the bottom of the dish is evenly covered.
In the same medium pot that I used before, on the stove set to low heat, I melt the chocolate chips and the 2 Tbsp of peanut butter, until fully melted & mixed.
Then I pour that chocolate over top the peanut butter mixture in the glass baking dish, and evenly spread it out, so that it’s covering the whole top.
I cover the baking dish and pop it in the freezer for at least a half hour, then cut it into 9 squares, before serving & enjoying the yumminess!!

- 3/4 cup unsweetened shredded coconut
- 3/4 cup almond flour
- 2 Tbsp ground flax seed
- 3/4 cup Swerve confectioners sweetener
- 1 cup unsweetened natural peanut butter
- 2 Tbsp coconut oil
- 4 oz unsweetened dark chocolate chips
- 2 Tbsp unsweetened natural peanut butter
Ingredients

- Lightly chop shredded coconut in blender or food processor (optional)
- Mix coconut, almond flour, flax meal, & Swerve in large mixing bowl
- In medium saucepan, melt & mix 1 cup peanut butter & coconut oil, until fully melted & mixed
- Pour over dry ingredients, mix
- Plop into the bottom of an 8" x 8" glass square baking dish, and spread it out, until the bottom of the dish is evenly covered
- In medium saucepan, melt & mix chocolate chips and 2 Tbsp peanut butter, until fully mixed & melted
- Pour over peanut butter layer and smooth out evenly until completely covering peanut butter
- Freeze for at least 30 minutes
- Cut into 9 equal pieces (or smaller, for group gatherings), serve, & enjoy!
