Keto Trail Mix

Need a quick snack while driving or hiking and not sure what to eat? This trail mix is delicious, filling, easy & quick to make, and Keto -friendly!
I choose to make my trail mix in a mason jar, since it looks cute, it’s sealable, and reusable, but I also sometimes use a sealable bag for when I’m making the trail mix to bring hiking. Who wants to lug around a glass mason jar in their backpack?!? Hahaha. I start off by layering unsweetened coconut chips, salted mixed nuts (if you’re strict keto, make sure to get a mix without peanuts), pumpkin seeds, & Lily’s Chocolate Chips, and occasionally unsweetened dried blueberries or cranberries.
I continue layering all ingredients until I reach the top, then I take a spoon and swirl it around to mix, and shake it up a bit. Once it’s mixed, it’s ready to eat! I love to grab this to bring with me as a little snack before going to my 6am kickboxing classes, since I don’t like to eat a full meal that early in the morning, but I don’t want to workout on an empty stomach. It’s also nice for long car trips, since it’s sweet & salty!

- salted mixed nuts (Feel free to substitute with unsalted, or peanut free nut mixes)
- pumpkin seeds
- Lily's Chocolate Chips (If vegan, substitute out with dairy-free chocolate chips)
- Unsweetened dried cranberries (Optional)
- Unsweetened dried blueberries (Optional)
