This is one of the easiest, cheesiest, and yummiest snacks to make! Not only is it easy, but there’s only 3 ingredients!
Okay, now I have to confess, the one ingredient is a bit difficult to find, at least in grocery stores around me. Out of the handful of grocery stores nearby, I’ve only found it in one of them. What is is? Queso Fresco. It’s a type of cheese that comes in a small round disc and is found in the specialty cheeses section of the grocery store.
First I start out by cutting the Queso Fresco into 1/4 – 1/2 inch strips.
After that is cut, I get out a large frying pan and heat up some olive oil to cover the bottom of the pan. I use Saratoga Olive Oil’s Tuscan Herb Olive Oil for a nice flavor, but regular olive oil would work just fine as well. I put my stove on medium-high heat.
Once the olive oil is heated up and covering the bottom of the pan (I sometimes need to swirl my pan around a little to get the oil to cover the whole bottom of the pan), I lay each strip of Queso Fresco out, trying to keep a little space between each. Thankfully my pan is just big enough to fit all of the pieces in, but if you’re using a smaller pan, you can just do this in two batches. After one side has fried up crispy brown, I flip them over to the other side.
After both sides have browned, they’re ready to remove from heat and serve with some warm marinara or sugar-free tomato sauce of your choice. I warm up a half cup at a time in the microwave for 45 seconds, covered. Keep in mind that this recipe makes enough for at least 2 people. You can also store the remaining sticks in the fridge to be warmed up another day.
