Turkey Goat Cheese Pepperoni Pizza

This is one of my favorite recipes, so I make it 2 or 3 times a month!  It’s my husband’s favorite keto meal.  He says that it’s so good, he could drink it!  It’s also PIZZA, and who doesn’t love pizza?!?!

Of course, the crust comes first!  I take my ground turkey and regular goat cheese and mix them together with garlic powder & herbs.  It’s helpful if the turkey & goat cheese is at room temperature, so that it mixes together well.  I only buy Montchevre or Vermont Creamery Natural Goat Cheese.

 

Once the turkey & goat cheese is fully mixed, I spread it out in the bottom of a stone bar pan, then pop it into the oven at 350 for 5 – 7 minutes.  Note that the crust will shrink up a little in size.

I then spread a thin layer of tomato sauce evenly all over the crust.  Make sure that when you’re buying tomato sauce, you check to be sure it does not have sugar in it, and that it’s low in carbs.

 

Next, it’s time for the cheese.  I have tried this with several different types of cheeses, and nothing compares to the yumminess of freshly grated Cheddar Goat Cheese.  I can only find this in one of my local-ish grocery stores, so it may not be available in all areas.  The next best option would be full-fat mozzarella cheese.  I spread my cheese over all of the sauce, then top with pepperoni &/or bacon, and bake for 10-15 minutes at 350 degrees, until the cheese is melty and the pepperoni/bacon starts crisping a little.

 

 

Now, it’s time to enjoy!!!  YUM!!!

  1. Preheat oven to 350 degrees.
  2. Mix ground turkey, natural goat cheese, Italian seasoning, & garlic powder. (It's easier to mix if you let the meat & cheese warm to room temperature first)
  3. Spread in the bottom of a rectangular stone bar pan or baking sheet with an lip around all 4 edges.
  4. Bake the crust for 5-7 minutes (until it starts to stiffen & pull away from the edges of the pan).
  5. Spread tomato sauce evenly over the crust.
  6. Top with your choice of pepperoni, bacon, &/or any other favorite pizza toppings!
  7. Bake for 10-15 minutes until the cheese is melted & bubbly, and the toppings start to crisp.
  8. ENJOY!!!
