Cauliflower “Macaroni” & Cheese
I kept hearing about how yummy cauliflower mac & cheese is, so I thought I’d give it a whirl by making it similarly to how I would make regular homemade mac & cheese, with real noodles.
I use an entire head of cauliflower and cut it up small, then warm it up in the microwave to start cooking it for 8 minutes, stirring every 2-3 minutes. I also preheat my oven and butter a 9×13 glass pan at this time.
Next, it’s time for the cheese sauce! I start off by warming the heavy whipping cream in the microwave for a minute and a half, setting aside, then melting the butter in a medium pot, then stir in almond flour until it starts bubbling a little, but not browning. This takes about 2 minutes.
After the butter/almond flour mixture is bubbly, I add in the warmed heavy whipping cream, and stir until the sauce thickens and comes to a boil. Once boiling, I add in the cheddar cheese, cayenne pepper, himalayan pink salt, & ground pepper, stir that all together, then cook for another 2 minutes, before removing from heat.
I put the cooked cauliflower in the buttered pan, pour the cheese sauce evenly over the cauliflower, then mix gently. I poke more cheddar cheese throughout the whole thing & bake for about a half hour, or until all cheese is bubbly and browning. Then serve with a sprinkle of pepper on top!

- 4 tbsp butter
- 4 tbsp almond flour
- 1 cups heavy whipping cream
- 1 cup shredded cheddar cheese
- 1 pinch Himalayan pink sea salt
- 1 pinch ground black pepper
- 1 pinch cayenne pepper
- 1 head cauliflower cut & cooked

- Cut cauliflower up in small pieces and place in microwave safe bowl.
- Heat for about 8-10 minutes in 2-3 minute increments, stirring in between, until fully cooked
- Preheat oven to 375 degrees.
- Grease 9 x 13 glass pan with butter.
- Warm heavy whipping cream in microwave for 1.5 minutes.
- Melt butter in medium saucepan.
- Stir in almond flour & stir until a little bubbly, but not brown (about 2 minutes).
- Add in warmed heavy whipping cream, and stir until the sauce thickens and comes to a boil.
- Add in cheddar cheese, salt, & peppers.
- Cook for 2 more minutes, stirring regularly, then remove from heat.
- Pour cooked cauliflower in buttered pan.
- Pour cheese sauce over cauliflower & mix lightly, so that the cauliflower is coated evenly.
- Sprinkle on remaining cheddar cheese & poke in throughout cauliflower.
- Bake until cheese is bubbly and lightly browned (about 30 minutes).
- Serve sprinkled with a bit of ground black pepper.
