Cauliflower “Macaroni” & Cheese
I kept hearing about how yummy cauliflower mac & cheese is, so I thought I’d give it a whirl by making it similarly to how I would make regular homemade mac & cheese, with real noodles.
I use an entire head of cauliflower and cut it up small, then warm it up in the microwave to start cooking it for 8 minutes, stirring every 2-3 minutes. I also preheat my oven and butter a 9×13 glass pan at this time.
Next, it’s time for the cheese sauce! I start off by warming the heavy whipping cream in the microwave for a minute and a half, setting aside, then melting the butter in a medium pot, then stir in almond flour until it starts bubbling a little, but not browning. This takes about 2 minutes.
After the butter/almond flour mixture is bubbly, I add in the warmed heavy whipping cream, and stir until the sauce thickens and comes to a boil. Once boiling, I add in the cheddar cheese, cayenne pepper, himalayan pink salt, & ground pepper, stir that all together, then cook for another 2 minutes, before removing from heat.
I put the cooked cauliflower in the buttered pan, pour the cheese sauce evenly over the cauliflower, then mix gently. I poke more cheddar cheese throughout the whole thing & bake for about a half hour, or until all cheese is bubbly and browning. Then serve with a sprinkle of pepper on top!
